Are there certain vocal traits they must possess, or is it just the style of the music they perform? I've always wondered.

I think a lot has to do with the musical style. But I'm no jazz expert.....

Yes,I would think it must be their style.However,I have heard some people feel that what is passing as Jazz today,like Kenny G and Anita Baker,isn't really Jazz at all.Merely Adult Contemporary played in a slower manner.Yet they call it "smooth jazz".Perhaps it is in the ear of the artist.

Perhaps it is in the ear of the artist. That's a good way to look at it. I think it's that way with a lot of musical styles though.

Interesting question - I somehow missed this when it was first posted. I think it's a combination of things. From the little I know about musical theory (which admittedly isn't as much as I'd like), most jazz music is written in certain modes, or scale patterns, that are a little different from pop music. Vocally, I think the artists are usually very good at improvising...they don't generally stick strictly with the melody line but often add their own flourishes here and there. And male jazz singers especially often scat (like George Benson on This Masquerade).
