For those that don't know Hockey, I'll explain what I mean.
Basically, I'd like some examples where an artist had three brilliant albums right in a row.
In the case of a Greatest Hits, it can be included, I guess if there is new material.
If an artist made 3 great albums around the GH, you can just list those 3 together. I have an example at the bottom.
ELO-Face the Music, A New World Record, Out of the Blue
Collective Soul-Disciplined Breakdown, Dosage, Blender
Van Halen-II, Women & Children First, Fair Warning
Beatles-Rubber Soul, Revolver, Sgt Peppers
Yes-Time and a Word, Yes Album, Fragile
Steely Dan-Katy Lied, Royal Scam, Aja
Led Zeppelin-Houses of the Holy, Physical Graffitti, Presence
Martina McBride-Ok, if you include her Greatest Hits, which had 4 new songs, then it would be- Evolution, Emotion, Greatest Hits
But I'd rather discount the GH and make it Evolution, Emotion, Martina
But following the straight rules- Wild Angels, Evolution, Emotion
Have at it!

Pete and Dawn mentioned several of the ones on my list.
I'll add: The Old 97s - Hitchhike To Rhome, Wreck Your Life, Too Far To Care
Elvis Costello - My Aim Is True, This Year's Model, Armed Forces Funny, I just finished reading an article where these 3 were called "a trilogy of albums that rank with the greatest three-LP series in pop-rock history."
James Taylor - Gorilla, In The Pocket, JT This is an example of the Greatest Hits coming between the 2nd and 3rd albums here.

What exactly constitutes an album as brilliant? Just our own opinion?

I think you got the Stones right in your choices-I know a Stones nut and he would agree. As much as he likes Beggars, he wouldn't lop off Exile in favor of it. Hmmmm, for Plant I'd say, Now and Zen, Nirvana & Fate of Nations! LOL! Ok, the last one isn't great, but I never got into Shaken. However, I LOVE Principle!
