Unchained Melody - The Theme from "Unchained"
And for horror themes, I agree with Ken on Tubular Bells
but for pure eerie horror, the themes from
Halloween and
A Nightmare on Elm Street are super.

I really liked the music Cat Stevens did for Harold and Maude...I also liked Simon and Garfunkle's soundtrack to The Graduate. The music fit the mood of those movies.
Some other favorites are:
Rushmore- such an addictive soundtrack!
Star Wars
The Godfather
I also like a lot of Danny Elfman's work that he does in films.
